Dips don’t have to be over-the-top decadent to be delicious, as proved by this fresh take on marinated artichoke dip. This easy recipe packs in tons of flavor, but in a much lighter package than usual. Greek yogurt takes the place of the standard mayonnaise, cream cheese, and sour cream; a little bit of olive oil adds richness. While the dip comes together quickly, the longer it marinates, the more the artichoke flavor shines through, making this a great dip to prep ahead for Super Bowl spreads or pre-dinner snacks.

Ingredients

  • 1 32-oz. container plain full-fat Greek yogurt

  • 1 12-oz. jar marinated artichoke hearts, drained and chopped

  • 2 tablespoons finely chopped fresh flat-leaf parsley leaves, plus more for serving

  • 1 tablespoon olive oil

  • 1 teaspoon lemon zest plus 1 tsp. fresh juice (from 1 lemon)

  • 1 teaspoon kosher salt

  • ¼ teaspoon freshly ground black pepper

  • Pita, crackers, or vegetables, for serving

Directions

  1. Mix yogurt, artichoke hearts, parsley, oil, lemon zest and juice, salt, and pepper in a large bowl until well combined.

  2. Transfer to a serving bowl and top with parsley. Serve dip with pita, crackers, or vegetables.
