Bourbon-Campari Punch

A retro ice ring studded with pomegranate arils floating in a sweet-tart punch makes for a festive holiday drink.

If you make one thing this holiday season, let it be this punch spiked with bourbon and Campari. A gorgeous ice ring makes it incredibly festive and just so pretty to look at. Guests will be charmed by the delicate pomegranate arils floating in the drink's ice ring as they ladle the sweet and tart punch into glasses. The bourbon is warming, the Campari offers its essential bitter notes, and citrus juice brightens this not-too-strong tipple. Shop for containers of pomegranate arils to cut back on prep time. 

Ingredients

Pomegranate Ice Ring

  • 1 3/4 cups pomegranate arils

  • 1/2 cup unsweetened pomegranate juice

Bourbon-Campari Punch

  • 6 1/2 cups bourbon

  • 2 cups pomegranate juice

  • 1 cup campari

  • 1 cup unsweetened orange juice

  • 1/2 cup fresh lime juice

Simple Syrup

  • 1/4 cup granulated sugar

Directions

  1. Place pomegranate arils in a Bundt pan. Cover with 1/2 cup unsweetened pomegranate juice and 1/2 cup water. Freeze until solid, at least 4 hours.

  2. Combine bourbon, 2 cups pomegranate juice, Campari, orange juice, lime juice, and 1/2 cup simple syrup in a punch bowl. (To make simple syrup, simmer 1/4 cup water with 1/4 cup granulated sugar until sugar dissolves.)

  3. Run Bundt pan under warm water until ice ring releases. Add ice ring to punch bowl and serve.
