Ginger-Lime Melon Salad

(12)

Fresh melon is one of summertime’s greatest pleasures, and while it’s delicious eaten on its own, we made the juicy fruit even better with the addition of lime and ginger. Just these two ingredients elevates melon from a cookout side dish to a dinner party-worthy salad (or dessert).

Once we discovered the match made in heaven that is sweet summer melon and freshly-grated ginger, we couldn’t stop combining the two. Adding lime zest and juice makes it extra zingy and refreshing. Get the recipe:Ginger-Lime Melon Salad. Photo: Jennifer Causey

Because fresh melon is so hydrating, it’s a great option for a hot summer day. Feel free to use your favorite kind of melon, although we prefer a mixture of watermelon, honeydew, and cantaloupe. Slice it into wedges or cubes, or use a melon baller for cute spheres—no matter how you cut it, the results will be divine.

Ingredients

  • 3 ½ pounds melon (such as cantaloupe, honeydew, and/or watermelon), peeled, seeded, and thinly sliced

  • 1 tablespoon lime zest plus ¼ cup fresh juice (from 2 limes)

  • 1 tablespoon grated fresh ginger (from 1 [2-in.] piece)

Directions

  1. Gently toss together melon, lime zest, lime juice, and ginger in a large bowl. Transfer to a platter; serve immediately, or cover and chill until ready to serve, up to 3 hours.
