Hummus and Cucumber Toast

Hummus isn't just for dipping carrot sticks and pretzels. Case in point: this delicious, easy toast recipe.

This recipe for hummus and cucumber toast pairs Persian cucumbers with hummus and a sprinkle of za'atar spice mix.

A schmear of hummus creates the base for thin slices of Persian cucumbers, which have a superior skin-to-flesh ratio compared to the greenhouse kind. You'll then finish it off with a drizzle of olive oil and sprinkle of za'atar spice mix.

Ingredients

  • 2 tablespoons hummus

  • 2 slices whole-grain bread, toasted

  • 1 Persian (mini) cucumber, sliced

  • 1 teaspoon olive oil

  • ¼ teaspoon za'atar

  • Flaky sea salt, for serving

Directions

  1. Spread 1 tablespoon hummus on each piece of toast. Top evenly with cucumber slices. Drizzle with oil. Sprinkle with za'atar and flaky sea salt.
