In this weeknight-friendly rendition it takes its cues from muffaletta, a hero-style sandwich hailing from New Orleans consisting of Italian bread, provolone, salami, ham, and jarred olive salad. Here, the store-bought olive salad is perked up with just a squeeze of lemon, and the sandwich is served alongside a lemony honey-mustard salad for a complete meal. Ingredients 1 tbsp honey dijon mustard 2 tsp lemon zest 2 tbsp fresh lemon juice, divided 1/4 tsp kosher salt 3 tbsp olive oil 1/2 cup drained Italian olive salad 2 tbsp unsalted butter, at room temperature 8 slices Italian bread 8 slices provolone cheese 8 slices capicola or deli ham (6 oz.) 6 cups chopped Romaine lettuce Directions Whisk mustard, lemon zest, salt, and 1 tablespoon lemon juice in a large bowl; gradually whisk in oil until combined. Stir together olive salad and remaining 1 tablespoon lemon juice in a small bowl. Spread butter on 1 side of each bread slice. Place slices, buttered side down, on a work surface. Top each of 4 bread slices with 2 provolone slices, 2 hot capicola slices, and olive salad mixture. Top with remaining 4 bread slices, buttered side up. Place 2 sandwiches in a large nonstick skillet. Cook over medium until cheese has melted and bread is golden brown, 3 to 4 minutes per side. Repeat with remaining 2 sandwiches. Toss lettuce with dressing until coated. Serve with sandwiches.
