One of the great things about this sandwich is that you can create a filling that's tailored to your taste. Feel free to use either sweet or dill pickle relish to season the mixture, along with mayo, flat-leaf parsley, and salt and pepper.

In truth, the hard-boiled eggs are optional. But we're willing to bet, after one bite, this mash-up will become your new go-to for an inexpensive, protein-packed lunch. Even better? The sandwich clocks a mere 171 calories. In other words, have a handful of potato chips on the side.

Ingredients

  • 1 6-ounce can tuna, drained

  • 2 tablespoons pickle relish (dill or sweet)

  • 1 hard-cooked egg, peeled and finely chopped (optional)

  • 2 tablespoons mayonnaise

  • 1 tablespoon chopped fresh flat-leaf parsley

  • kosher salt and black pepper

  • 8 slices white bread

Directions

  1. In a small bowl, gently combine the tuna, relish, and egg (if desired).

  2. Add the mayonnaise and parsley and combine. Season with ¼ teaspoon salt and ¼ teaspoon pepper.

  3. Divide the salad among 4 slices of bread and sandwich with the remaining slices. Cut in half and serve.
