Pineapple is the star here, in part, because chunks of fresh pineapple are blended with brown sugar until smooth and creamy, making it a much better alternative to store-bought juice. Then the sweetness of the mango juice rounds out any acidity from the rich pineapple concoction. The combination of rum and coconut rum provides a warm tropical edge to the vibrancy of the fruit. It’s the perfect drink to serve when hosting a summer BBQ in the backyard. Cocktail umbrellas are optional but highly encouraged. Ingredients 24 oz fresh pineapple (4 cups) 1/4 cup packed light brown sugar 8 oz refrigerated mango juice (such as Naked) 8 oz gold or white rum 4 oz coconut rum Pineapple slices and maraschino cherries, for garnish (optional) Directions Process pineapple and sugar in a blender until very smooth and creamy, about 45 seconds. Pour into a pitcher. Stir in mango juice, gold rum, and coconut rum. (Mixture can be refrigerated, covered, for up to 1 day. Whisk before serving.) Serve over ice. Garnish with pineapple slices and cherries, if desired.
