Summer Ambrosia

Ambrosia deserves a renaissance, and this is the recipe to lead the movement. Rather than the fruit cocktail of yore, you’ll toss the requisite marshmallows with a bouquet of fresh fruit—strawberries, blueberries, blackberries, cherries, and nectarines all get in the mix. The honey-lime dressing draws out the floral notes in the fruit while also toning down the marshmallows’ cloying sweetness. Finish it off with a shower of fresh mint and toasted coconut to make a wow-worthy dessert.

Ingredients

  • 1 (16-oz.) container fresh strawberries, hulled and halved

  • 1 cup fresh blueberries

  • 1 cup fresh blackberries

  • 1 cup fresh cherries, pitted and halved

  • 1 nectarine, sliced

  • 3 tablespoons lime juice (from 1 large lime)

  • 2 tablespoons honey

  • 1 ½ cups marshmallows, quartered with scissors

  • 1 tablespoon chopped fresh mint

  • ½ cup toasted, unsweetened flaked coconut

Directions

  1. Stir together strawberries, blueberries, blackberries, cherries, nectarine, lime juice, and honey in a large bowl until combined. Fold in cut marshmallows and mint. Sprinkle with coconut and serve.
