Bye, bye, tacos. Hello, tostadas! Tostadas are crisp-fried tortillas garnished with an array of satisfying toppings. In the case of this shrimp tostada recipe, they're crowned with refried beans, sweet-and-spicy shrimp, cabbage, and a dusting of cheese. The shrimp is marinated in a smoky chipotle and sweet honey mixture. Creamy store-bought refried beans get a boost from sour cream and hot sauce. It’s an easy meal to prepare, yet it will make you feel like you’ve got some skills in the kitchen.

For a protein-packed vegetarian version, call in tofu instead. Drain and pat dry a 16-ounce package of extra firm tofu, and cut it into 1-inch pieces. Marinate as you would the shrimp and cook for about 5 minutes.

Ingredients

  • 3 Tbsp. honey

  • 1 Tbsp. chopped canned chipotle chiles plus 1 Tbsp. adobo sauce (from a 7-oz. can chipotle chiles in adobo sauce)

  • 1 1/2 tsp. kosher salt, divided

  • 1 lb. large raw shrimp, peeled, deveined, and tails removed

  • 1 16-oz. can refried beans

  • 1/4 cup sour cream

  • 1 tsp. hot sauce

  • 1 Tbsp. olive oil

  • 1/2 cup thinly sliced red onion (from 1 onion)

  • 1 Tbsp. minced fresh garlic (from about 4 cloves)

  • 8 6-in. corn tostadas

  • Crumbled Cotija or feta cheese, shredded cabbage, and cilantro leaves, for topping

  • Lime wedges, for serving

Directions

  1. Whisk honey, chiles, adobo sauce, and 1 1/4 teaspoons salt in a large bowl. Add shrimp and toss to coat. 

  2. Heat beans, sour cream, hot sauce, and remaining 1/4 teaspoon salt in a small saucepan over medium-low, stirring occasionally, until heated through, 5 to 8 minutes.

  3. Meanwhile, heat oil in a large skillet over medium-high. Add onion, garlic, and shrimp mixture. Cook, stirring occasionally, until glaze is thickened and shrimp is pink and cooked through, 3 to 4 minutes.

  4. Divide bean mixture among tostadas. Divide shrimp mixture among tostadas and drizzle with any juices. Top with cheese, cabbage, and cilantro. Serve with lime wedges.

The saucy shrimp component of this dinner would also be delicious tucked into tacos or served over rice.
