How to Make Zucchini Fries in 6 Easy Steps

Getting your vegetables in is way easier when you’re munching on something as delicious as zucchini fries. The soft, mild flavor and texture of the zucchini wrapped up in a savory and salty breading is perhaps the most perfect combination, and makes for a great side dish or appetizer. Homemade zucchini fries may seem like a labor of love, but they are incredibly easy to make and a healthier option than traditional French fries from a restaurant because they’re baked and not fried. And the dipping sauce options are endless—pair zucchini fries with marinara, vodka sauce, a homemade aioli, or even just a squeeze of lemon juice—there’s no bad option. 

  • If you can’t find seasoned panko breadcrumbs, sprinkle some oregano or Italian seasoning into the bowl before dredging the zucchini.
  • Salting the zucchini beforehand will help extract the moisture and make for a crispy fry.

  • Baking sheet
  • Aluminum foil or parchment paper
  • 3 plates or trays, for dredging

Materials

  • 3-4 zucchini
  • ¼ cup of all-purpose flour
  • ¼ cup grated Parmesan
  • 2 eggs, beaten
  • Panko breadcrumbs
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Olive oil spray

Instructions

  1. Prepare Your Oven 

    Preheat the oven to 425 degrees and make sure the racks are positioned in the center of the oven. Then, coat a large baking sheet with parchment paper and spray it with olive oil.

  2. Salt the Zucchini

    Slice the zucchini into fries, place the slices on paper towels, and sprinkle with salt. Let the zucchini fries sit for about 10 minutes to extract the moisture, and then pat them dry with a paper towel.

  3. Create Your Dredging Station

    Now it’s time to make your dredging setup. Whisk the eggs into one bowl, pour flour into the second bowl, and make your breadcrumb mixture in the third bowl (panko, Parmesan, salt, and pepper).

  4. Dredge the Zucchini Fries

    Working in batches, dredge each zucchini fry in flour, then egg, then breadcrumbs. Arrange each fry on the baking sheet, making sure there’s enough room between them (otherwise they’ll steam instead of crisping up).

  5. Bake the Zucchini Fries

    Once all of the zucchini fries are on the baking sheet, spray them with olive oil and bake for about 10 minutes. Remove the baking sheet from the oven, rotate the fries, and spray with olive oil again. Bake for an additional 10 minutes, or until golden and crispy.

  6. Season the Zucchini Fries

    Remove the zucchini fries from the oven and sprinkle them with a pinch of flaky sea salt. Plate the fries alongside some lemon wedges, or your favorite dipping sauce like marinara or an aioli.
