Got 15 minutes? Make this fresh and vibrant coleslaw recipe. You’ll start by whisking together the dressing, a straightforward, yet fragrant mixture of rice vinegar, sesame oil, canola oil, soy sauce, ginger, garlic, and honey. It’s savory and sweet, and dresses a mixture of cabbage, bell pepper, onion, carrots, and snap peas for a light side that pairs perfectly with grilled chicken, steak, or tofu. Make it several hours in advance and keep it in the refrigerator until ready to serve. 

Use a mandoline for even wisps of cabbage, onion, and bell pepper. A julienne peeler will help with the carrots. To save time on prep, purchase shredded cabbage and matchstick carrots.

Ingredients

  • 5 Tbsp. rice vinegar

  • 2 Tbsp. toasted sesame oil

  • 2 Tbsp. neutral oil (such as canola)

  • 2 Tbsp. lower-sodium soy sauce

  • 2 Tbsp. finely chopped fresh ginger (from a 1-in. piece)

  • 1 Tbsp. honey

  • 1 clove garlic, finely chopped (about 1 tsp.)

  • 1 2-lb. head green cabbage, finely shredded (about 9 cups)

  • 1 red bell pepper, thinly sliced (about 1 1/4 cups)

  • 1 small red onion, thinly sliced (about 1 cup)

  • 1 large carrot, peeled and cut into thin strips (about 1 cup)

  • 2 cups fresh sugar snap peas, stringed and sliced lengthwise

  • 1 1/2 tsp. kosher salt

  • Fresh cilantro, for topping

Directions

  1. Whisk vinegar, sesame oil, neutral oil, soy sauce, ginger, honey, and garlic in a large bowl until combined. Add cabbage, bell pepper, onion, carrot, and sugar snap peas; toss to coat. Sprinkle with salt; toss. Top with cilantro. 

    Make-Ahead: Prep and refrigerate the salad up to 8 hours ahead. Top with cilantro just before serving.
