Broccoli Slaw with Creamy Ranch Dressing

A stir-together ranch and a handful of fresh herbs will make this simple broccoli slaw the star of your cookout.

This broccoli slaw recipe will quickly become everyone's favorite side dish. It’s tossed in a make-it-yourself Ranch dressing that is simply stirred together mayonnaise, sour cream, and a couple of pantry-friendly seasonings like onion and garlic powder. Then store-bought broccoli slaw is tossed with the creamy dressing, scallions, parsley, and sunflower seeds for a pleasant crunch. If you have chives on hand, slice them and throw them in the mix. The same goes for matchstick carrots or shredded cabbage. Serve this fresh salad alongside bbq or burgers.

Making your own broccoli slaw is a great way to reduce food waste since it primarily uses broccoli stalks. To prep them, slice off the peel. Then cut the stalks into matchsticks, or shred them in a food processor. Bulk up the mix with thinly sliced carrots or shredded cabbage. 

Ingredients

  • 1/2 cup mayonnaise

  • 1/4 cup sour cream

  • 1/4 cup fresh lemon juice (from 2 lemons)

  • 2 tsp. kosher salt

  • 1 1/2 tsp. garlic powder

  • 1 tsp. onion powder

  • 1/2 tsp. freshly ground black pepper, plus more for topping

  • 2 12-oz. pkg. broccoli slaw (about 8 packed cups)

  • 3 scallions, thinly sliced (1/2 cup)

  • 1/2 cup chopped fresh flat-leaf parsley, plus more for topping

  • 1/3 cup roasted salted sunflower seeds, plus more for topping

Directions

  1. Whisk mayonnaise, sour cream, lemon juice, salt, garlic powder, onion powder, and pepper in a large bowl until combined. Add broccoli slaw, scallions, parsley, and sunflower seeds; toss to combine. Top with more parsley, sunflower seeds, and pepper.

Make-Ahead: Prep and refrigerate the dressing up to 2 days before serving.
